Making Uto Pancakes
Rangi Mitaera-Johnson teaches Amy Kainuku how to make 'Uto Pancakes' on the island of Rarotonga.
Uto Pancakes are a Northern Island dish and are not commonly made in Rarotonga or the Southern Group.
You will need Uto (Coconut Embryo in English), flour, sugar and oil.

Uto (coconut) pancakes
Ingredients
2-3 cups grated utos
1 cup flour
1 cup sugar
oil
Steps
In a large bowel, mix the uto, flour and sugar.
Knead it.
Take a handful of the mixture and make small patties with hands.
Heat a pan and add oil on a medium heat.
Cook the pancakes till colden brown on both sides.
Serve with favourite sauce.
