Island Eating: Sarah's Sapasui
At the heart of every island gathering is Samoa's staple dish of choice - Sapasui! Aunty Sarah shares her famous recipe with the Coconet.TV
Ingredients:
- 700gms Gravy beef/Chuck steak
- 2 x Packets of Vermicelli
- Sungold Soy style sauce (thick)
- Canola oil
- 2 x Garlic
- 1 x brown onion
Method
- Cut meat into bite size cubes
- Rinse meat with water and add to large pot
- Set stove to medium heat
- Steam meat with a cup of water for 15 mins
- Soak vermicelli in COLD water to soften, leave to soak
- Ready ingredients and set aside. Peel and crush 2 x garlic
- Peel and crush half a ginger
- Peel and slice 1 whole brown onion
- Trim vermicelli with scissors
- Stir the steamed meat and drain most of the excess water
- Add half a cup of oil to meat and stir
- Add a handful of onion and stir
- Add garlic and stir
- Add ginger and stir
- Add remaining onion, stir and leave to cook for 5 mins
- Add enough soy sauce to cover the meat, stir and leave to cook for 2-3 mins
- Drain water from vermicelli and add vermicelli in portions to the pot and stir as you add it
- Stir to spread the soy sauce over all ingredients until they are all the same colour brown
- Add 1-2 cups of water and stir
- Cover and leave to cook for 5-6 mins
- Stir and serve! ENJOY!
SERVING SUGGESTIONS:
Aunty Sarah’s Sapasui can be served with any of the following which all make a delicious accompaniment - Rice, Taro, Green banana, Potato salad, Breadfruit, Bread or all of the above!
